It comes from the Maya regions -- Yucatan on south into the countries of Guatemala and Honduras. As you might guess from the color, it hinges on charred ingredients, and once made, it can be stored in the refrigerator almost indefinitely. Use it whenever you need flavor that is cool and smoky, but with picante and sweet elements.

Read the details in Hank's simple roast pheasant recipe. Hank cooked a fancy dinner for 65 at the swanky Wing & Barrel Ranch, a pheasant club and sporting clays establishment in Sonoma. He and the house kitchen crew, who were amazing, put on a Spanish feast of gambas al ajillo, pheasant escabeche, chilindron, and even a plate of boquerones for a surprise pescatarian. Holly, however, does not have any dead-cow parts in the refrigerator or freezer, so she took Hank's arrachera recipe and made it with skinless snow goose breasts, topped with Hank's killer avocado-tomatillo salsa. Waterfowl meat cannot emulate the delightfully loose grain of skirt or flank steak, but the marinade works really well on the red meat of wild waterfowl breasts.
The key: cutting the breasts in half so they are still the same length and width, but half the thickness. This isn't too hard to do if you make the cut when they're still just a bit frozen. Start by cutting them in half across the width, which will expose the thickest part of the meat, making it easier to position your knife for easy cutting. 6.
