comes in really handy for me in building a little bit of flavor into all sorts of dishes." --Cathy Barrow This is one of many tidbits of information that really got Hank's attention when he spoke with pressure canning expert Cathy Barrow for the latest episode of the Hunt Gather Talk podcast. Others included the importance of maintaining
pressure, what not to pressure can, and the appropriate amount of head space you should maintain in your jars. If you've always been afraid to try pressure canning, give it a listen, because Cathy will set your mind at ease ("It should make you respectful, but not scared," she said.) And if you're a veteran pressure canner,
as Hank is, you'll still learn some new things (as Hank did). Hank is cooking up a storm on the road. Last week he was among the headliners at the annual Backcountry Hunters and Anglers Rendezvous, helping a crew of talented cooks to prepare a multi-course tasting menu for the
group's big fundraiser -- shout out to Shannon Waters (left) and Anna Borgman (right) for the invaluable help! And just yesterday he teamed up with Top Chef alums Chad White and Byron Gomez in Spokane for a Latin seafood feast at Chad's restaurant Zona Blanca.
