Preserved garlic is absolutely amazing.
Here's what's trending on Hunter Angler Gardener Cook: - Garlic is coming ripe everywhere, and if you find yourself with lots, I have an incredible recipe for preserved garlic. You need a pressure canner, but man is this worth it!
- Pickled
nopales, the pads of the prickly pears cactus, are fantastic as a side dish for tacos or beans and rice. You can buy fresh paddles in any Latin market.
- A simple wiener schnitzel, a German cutlet normally made with veal, is a great summer summer. Use any white meat here, from pork to chicken, pheasant, grouse, you name it.
- We made Mexican sopes at a recent Borderlands cookbook event, and they were a huge hit. Here's how to make sopes, which don't need any special equipment.
- Southern fish and grits is a classic. You can make it with pretty much any fish,
too.
- If you're looking to make some fun grilling sausages, try my garlic sausages. Pork or venison are your meats of choice here.
- Got crabs? [snicker] Make
you some deviled crabs then. It's one of the crab dishes I grew up with, and it's amazing.
Moving up the list: A borderlands favorite, pork chile verde! Super good as the filling for burritos on tacos, or with beans and rice.

2. Salmon and Trout Recipes
This is the best sauce for salmon or trout in summertime.
Summer is a great time for salmon and trout fishing, and I have lots and lots of recipes for them. Salmon and trout are interchangeable in these recipes. Here are a few of my faves: - Salmon risotto is a fantastic, easy dish to impress your friends with. Great with trout, too.
- Looking for a perfect summer recipe for salmon or trout? Make my salmon with cucumber sauce. It's a New Nordic style dish that will knock your socks off -- even if you don't like cucumber.
- Trout or salmon chowder is a great dish for when the nights cool. This is a Pacific Northwest style chowder.
- Smoked salmon tacos is definitely something that should be on your to-make list. They're not a traditional Mexican taco, but they sure are
good!
- Trout or salmon rillettes are basically a fancy "fish dip," perfect for summer parties. You will love it.
Summer chanterelles are here! Chanties are a summer mushroom in most of North America, and they've finally mader their appearance here in Minnesota. West Coast folks, save this for your season in fall and winter. Look for them around oaks in the Midwest, and
definitely test them for bugs. You do this by gently pressing in the center of the cap: If it's soft and spongy, they wee beasties have gotten to it first. Hat tip to my friend Jaime over at Chick of the Woods for that bit of intel! Start with this primer on how to cook chanterelles, then browse around my favorite chanterelle recipes:
- A simple chanterelle sauce, great for fish -- like walleye -- or poultry or even just pasta.
- Chanterelles don't dry well; they lose all their flavor. Better to make pickled chanterelles to enjoy them all winter!
- Make this sexy chanterelle soup for your next date night. You won't be sad.
- A bowl of gold! This is a simple chanterelle pasta with golden cherry tomatoes, yellow bell peppers and lots of fresh chanties.
- Or go the risotto route with a lush chanterelle
risotto. Another good date night option that's easy enough to make on a work night.
4. Book Tour Behind the Scenes
