Hey Wisconsin! I'm headed your way. My book tour is leading me to Big Ten country this month, and I wanted to let you know about a few events I'll be at all over Wisconsin this month. First up is a book dinner at The Charmant Hotel in LaCrosse on October 20. Details and reservations are here. This will be my first event in LaCrosse, and I am really looking forward to it! The following evening I'll be in Madison, back at Forequarter, one of my favorite restaurants in the Midwest! And, well, I went to college in Madison, so Go Badgers! Everyone’s reservation ticket comes with a signed book. Here’s the tentative menu: - Confit of pheasant, spinach,
fermented aronia-apple vinaigrette with shaved parsni and apple
- Braised Quail pierogis with a cranberry-quail sauce and hen of the woods mushrooms
- Buttermilk Fried Rabbit, apple slaw and maple-cayenne syrup
- Sorghum Ice Cream, fried quail skin and hazelnut crumble
Cost is $75 for dinner and a signed copy of the book. Make your reservation
by calling Forequarter at 608/609-4717. After that, I'll be just north of Milwaukee in Cedarburg at the Fermentorium, where we'll be doing a casual

This spring I will be teaming up with my friend Larry Robinson at Coastal Wings Outfitters for a special culinary hunt for ducks and geese this January in Oklahoma!
As with all the hunts, this one is more than just the hunt itself. I'll be cooking dinner for everyone each night, and
you can expect some special dishes based off my cookbooks.
After each morning's hunt, I will give you tips and ideas on how to use every part of the birds you bring home, cooking techniques, as well as tricks on smoking and preserving your small game.
The hunt is January 17 to 20, and the cost is $2250 all-in, including lodging, all meals, cooking classes, game processing, and a copy of one of my
books.
