This episode covers the fleet-footed scaled quail, the premiere gamebird of the Chihuahuan Desert that covers West Texas, New Mexico, Arizona and yes, Chihuahua in Mexico. Scaled quail, also called blue quail, are challenging birds to hunt, but not to eat. They are mild and wonderful at the table.
I talk all about it with my guest Ryan O'Shaughnessy of West Texas Quail Outfitters, who also happens to hold a PhD in biology -- and yes, his specialty is quail and other gamebirds.
