Hunt Gather Talk Podcast is Back for Season 3!
|
Hey there,
Hank Shaw here. Just wanted to let you know that Season III of my Hunt Gather Talk podcast has begun, and it has started, well, swimmingly.
Topic? Fish and Seafood. In keeping with last season's thematic line -- last year we were all about upland game -- this year we're tackling all things fish and seafood, freshwater and salt. Think of it as a companion to my latest cookbook Hook, Line, and Supper.
We've already begun, so you can dive in right away with our first three episodes
- Rockfish with Milton Love. Rockfish, mostly a Pacific fish but which includes Acadian redfish in the Atlantic, are endlessly fascinating, made moreso by Prof. Milton Love, one of the world' foremost authorities on these fishes. And not only is he knowledgeable, he's hilarious, too. Definitely my funniest episode ever, and
worth your time even if you don't fish for rockfish.
- Busting the myths about so-called trash fish, with Scott Leysath and Tom Dickson. This episode is all about loving the unloved, and breaking down not only how to enjoy "rough fish," but where we even got that idea in the first place. All three of us have been catching and cooking offbeat species for 40-plus years, all over the
country.
- The Great Farmed vs. Wild Debate with Barton Seaver. Seaver, a friend and the author of the fantastic book American Seafood, helps me get into the nitty gritty about farmed fish and seafood. Hint: It's not all bad, and a lot is mind blowing.
More episodes will be coming about every other week.
I'll be talking about ike jime, the Japanese method of killing fish that results in the highest quality fish in the world, about how consumers are getting top quality fish directly from the fishermen, to topics like the role of fish and seafood in West African and Mexican cuisines, the glories of the Southern California fishery, and how to utilize the whole fish, fins to tail.
Thanks in advance for listening, and thanks to E-Fish and Filson for sponsoring the show!
Tight lines!
~ Hank
